Production of specialty cheese (which consists of all cheese except cheddar and process cheese) rose 3.5% from January 2017 to 28 035 tonnes in January 2018. Canada's top specialty cheese-producing provinces are Quebec and Ontario. Since the turn of the 21st century, the two provinces have produced between 79.7% and 89.3% of the country's specialty cheeses each month.

Stocks of creamery butter on February 1 were 28 637 tonnes, more than double (+106.6%) the total on the same date a year earlier.

Total cash receipts from milk and cream sold off farms totalled $566.2 million in January, up 3.3% from the same month last year.
