Oh potatoes…from mashed to baked, they take center stage in some of our favourite dishes. With almost 400 potato seed varieties registered in Canada, we no doubt enjoy our fair share of chips and French fries. But Canadians don’t stop at just plain French fries; add a few cheese curds and a little gravy and you have the perfect mix of the quintessential Canadian cuisine—poutine! This dish has become known around the world as a Canadian staple, tracing its roots back to the province of Quebec.  In 2021, Canada produced over 5.6 million tonnes of potatoes. That’s a whole lotta poutine! So grab a friend and grab a poutine because today in Canada, we celebrate National Poutine Day!
