Maple products, 2025

Canadian maple producers harvested 18.9 million (correction) gallons of maple syrup in 2025, down 5.1% from the record high in 2024. Despite this decline, 2025 was still the second-highest production year on record, driven by favourable weather conditions across all maple-producing provinces.

Quebec is Canada's top maple-producing province and accounted for 90.0% (correction) of overall production in 2025. Maple syrup production in Quebec declined 5.9% to 17.0 million gallons in 2025, falling short of the record 18.0 million gallons produced in 2024. Though production declined, 2025 still had a strong season, with favourable weather and consistent freeze-thaw cycles ensuring good sap flow. Quebec maple syrup producers announced 7 million new taps this year to respond to increasing demand for maple products.

New Brunswick producers reported a 3.8% decline in production to 1.16 million gallons in 2025. Nevertheless, production was 29.2% (correction) above the five-year average.

In Ontario, producers harvested 690,000 (correction) gallons of maple syrup in 2025 on higher yields and more taps than the year before. The increase in production was also attributable to an extended maple run in northern Ontario.

Correction notice

  • The total production for Canada was corrected from 18.8 million gallons to 18.9 million gallons.
  • The national annual percent change in total production within the indicator was corrected from 5.0% to 5.1%.
  • Quebec's share of national total production was corrected from 90.4% to 90.0%.
  • New Brunswick's five-year average production was corrected from 29.1% to 29.2%.
  • Ontario's production was corrected from 690,167 gallons to 690,000 gallons.
