Canadian millers milled 3 267 039 tonnes of wheat in 2020, up 2.1% from 2019, while total flour produced grew to 2 488 854 tonnes, an increase of 1.5% compared with the previous year. In 2020, wheat, excluding durum, milled in Canada, rose 1.7% to 3 031 889 tonnes compared with 2019, while durum wheat milled increased 7.8% to 235 150 tonnes over the same period. The overall growth in wheat milled and flour produced in 2020 was partly because of an increase in milling capacity in Canada.

In the 2019/2020 crop year, domestic use of wheat for human food reached 3 019 234 tonnes, contributing to 31.7% of total domestic disappearance of wheat in Canada (Supply and disposition of grains in Canada). After accounting for domestic use, wheat product exports (in grain equivalent) represented the rest (7.4%) of total wheat milled in Canada, reaching 237 062 tonnes during the same year.

In the United States, millers milled 24 983 269 tonnes of wheat in 2020, an increase of 0.6% from the previous year. Total flour produced increased by 0.8% to 19 313 827 tonnes in 2020 compared with 2019.

The quantity of wheat, excluding durum, milled in the United States marginally increased in 2020 compared with 2019, totalling 23 035 698 tonnes. Durum wheat milled was up 7.7% to 1 947 571 tonnes over the same time frame.
