Milled wheat and wheat flour produced, Canada and United States, 2021

Canadian millers milled 3 156 301 tonnes of wheat in 2021, down 3.0% from 2020, while total flour produced fell to 2 401 303 tonnes, a decrease of 2.7% compared with the previous year. This decline in wheat milled and flour produced coincides with a 38.4% decrease in Canadian wheat production during the 2021 harvest period compared with the previous year's harvest period, driven largely by drought conditions in Western Canada that resulted in lower yields.

In 2021, wheat milled in Canada, excluding durum, fell 2.4% to 2 947 233 tonnes compared with 2020, while durum wheat milled decreased 11.0% to 209 068 tonnes over the same period.

Wheat milled by Canadian millers is mainly used for human food in Canada, as well as for some exports to other countries. According to the supply and disposition tables of major grains for the 2020/2021 crop year, human food use accounted for 94.2% of the wheat milled from August 2020 to July 2021.

In the United States, millers milled 24 858 132 tonnes of wheat in 2021, a decrease of 0.5% from the previous year. Total flour produced decreased by 1.1% to 19 104 222 tonnes in 2021 compared with 2020.

The quantity of wheat, excluding durum, milled in the United States increased marginally in 2021 compared with 2020, totalling 23 113 071 tonnes. Durum wheat milled was down 10.4% to 1 745 061 tonnes over the same time frame.
