Canadian mushroom growers sold 155,191 short tons of mushrooms in 2023, up 1.2% compared with 2022 and the eighth consecutive annual increase. Total production in Canada's top mushroom-producing province, Ontario, increased 3.7% to 81,510 short tons.
While harvested and cultivated area were stable from 2022, the total value of mushrooms grew 2.2% to $710.0 million in 2023. The increase in total value was attributable to a rise in production and a higher average price for fresh market sales.
Agaricus mushrooms typically represent approximately 98% of Canada's total annual production, while specialty mushrooms such as shiitake, oyster and other varieties comprise the remainder.
In 2023, Canada exported 68,859 short tons of Agaricus mushrooms, down 4.3% from the previous year. Most of these exports were destined for the United States (99.7%).
